Performs functions requiring sound knowledge and skill in quantity / batch cooking methods and procedures to assist in preparing and cooking foods to order required in the operation of a major patient-care and commercial cafeteria facility of the University Health System.
Complies with University Health System and Department policies. Ensures the proper care and use of foods, supplies, equipment and complies with safety, hygiene and sanitation regulations.
Maintains good guest and working relations. Assures the competent, efficient and timely performance of duties and assignments.
Must meet established daily deadlines with accuracy and quality performance.
EDUCATION / EXPERIENCE
The ability to read, write and speak English, understand oral and written instructions, and do simple arithmetic is required.
High School Graduation or its equivalent plus vocational or on-the-job training in cooking is required. Oneyear experience in food production and cooking in demanding schedules is required, or one year of experience including culinary school.
The aforementioned with cooking experience in hospitals and multi-site facilities and University Health preferred. Computer knowledge and familiarity with Microsoft Office software programs and inventory / ordering systems etc. is preferred.

Job Responsibilities

Qualifications
- Experience as a cook or in a related role required
- Validated knowledge of the basic principles of food preparation, various cooking methods, and food safety regulations such as accurate food handling, sanitation, and storage

1st Cook
The 1st Cook acts as a right hand to the Sous Chef and is responsible for preparing and producing food items, a la carte, buffets, banquets, etc.
to specified requirements set by the Executive Chef and Food & Beverage department. The 1st Cook is flexible; open-minded and confident to take over any section of the kitchen operation at any time.
The 1st Cook’s goal is to ensure a high level of food quality, value, consistency, and satisfaction to the guests, while maintaining budgeted labor and staff.
Essential Duties & Responsibilities :
- Coordinates with Executive Chef, Executive Sous Chef and Sous Chef action plan for meal period.
- Inspect pre-opening progress and direct / assist as needed to ensure that all food operations meet or exceed standards and passenger expectations.
- Responsible for supervision and administration of line cooks and utility during meal period.
- Ensure that all Galley departments are always in full compliance with all company, United States Coast Guard and Federal Drug Administration rules and regulations at all times.
- Participate in pre shift and post shift line meetings.
- Ensure that all food specifications and presentations are adhered to during meal period.
- Daily attention to all cost control systems.

Minimum Qualifications & Requirements :
Education :
- HS Diploma or Equivalent Required

- Copy of DD214, if Veteran status
- Valid Driver's License
