The Bartender is responsible for the timely and accurate preparation of all cocktails, wine, beer, juice and soda. Following the set recipes of The Hot Behind You Hospitality Management Group (THBY) is required at all times to ensure a consistent product for our guests.

The bartender is responsible for maintaining a clean and presentable bar that is stocked appropriately for service. Above all, a bartender at THBY is responsible for safe and responsible service of alcoholic beverages at all times confirming legal drinking age through acceptable identification, refusing service to guests who are not of legal drinking age or who may be intoxicated, and communicating with management of any incident involving alcohol.

As a bartender at THBY you must have the knowledge, character, drive and attitude to learn what you do not know and TEACH what you do know.

Your job is multifaceted, and you must have a command of liquor, wine, beer, food, recipes, mixology, people, POS, and the possess the ability to make correct change in order for you to be successful;

all that and you have to be hospitable too! You need to be quick of hand, wit and mind. The following guidelines will help you understand your unique responsibilities here at THBY.

Responsibilities :

  • Maintain professional atmosphere in all guest areas.
  • Proper grooming and appearance standards are expected at all times
  • Always be nice, warm, friendly, caring and helpful; and treat all colleagues with care and respect
  • Fridges should be cleaned regularly with special attention paid to old fruit and vegetables, long-opened wine bottles, juices and standing water.

If it is at a state of inferior quality, it doesn’t belong.

  • All bar fruit must be washed thoroughly and free of stickers before being used in the bar.
  • It is the bartender’s responsibility to ensure that all drinks are served with fresh, attractive, appropriate, consistent garnish.
  • All drinks are served on a coaster / cocktail napkin in the bar.
  • You are responsible for cleaning the bar top regularly and maintaining a neat and orderly appearance.
  • You will be expected to deliver a prompt, friendly greeting whether able to assist immediately or not.
  • Offer food menu for every guest making specific suggestions.
  • Bartender’s wine knowledge includes the ability to make wine suggestions, recommend wine and food pairings, knowledge of storage location of all wines and the ability to accurately identify the labels of different wines from THBY wine list.
  • You are expected to produce cocktails for bar patrons and dining room guests according to the recipe standards listed in the Recipe Guide section of this manual.
  • You are expected to re-stock any used items before leaving at the end of the shift

Qualifications :

  • At least 21 years old or older
  • Able to stand for long periods of time
  • Strong sense of urgency and proficient at multitasking
  • 2+ years of Bartender experience preferred; not required
  • Ability to fluently read, write and speak English

The Food Server is Responsible for seamless service to our guests following the steps of service with a thorough knowledge of all food & beverage menus, including ingredients with allergy concerns.

A Server at THBY is also a salesperson, helping to sell specific cocktails, beer & wine as well as menu items and chef specials.

A server communicates regularly with management, chef and hosts about table needs, turn times, allergies, problems, complaints and compliments.

A server anticipates any needs and acts quickly upon guest requests.

Responsibilities :

  • Maintain professional atmosphere in all guest areas.
  • Proper grooming and appearance standards, as stated in the employee manual are
  • expected at all times
  • Treat all colleagues with care and respect.
  • Always be nice, warm, friendly, caring and helpful.
  • Expected to complete opening sidework prior to the start of service.
  • Responsible for understanding reservation and seating strategy as outlined in the Host section of this manual.
  • All tables should be polished and correctly set prior to guest arrival
  • Responsible for thorough knowledge of all menus.
  • Greet newly seated guests within 2 minutes.
  • All beverages must be served from a tray.
  • To ensure safety, carrying a maximum of 2 plates at a time is recommended.
  • Food is to be served from the left with an open palm to the guest and placed correctly before the diner; plates are cleared from the right.
  • You are responsible for ensuring proper silver is placed before the arrival of each course.
  • You must check back once every entrée is served (after 2 mins or 2 bites).
  • Responsible for basic wine knowledge for every wine on the list : Varietal, Winery, Vintage, & Price.

Qualifications :

  • At least 18 years old or older
  • Able to stand for long periods of time
  • Strong sense of urgency and proficient at multitasking
  • 2+ years of Serving experience preferred; not required
  • Ability to fluently read, write and speak English
