SUMMARY

Serves meals to patrons in restaurant and consistently provides professional, attentive, genuinely friendly service to patrons.

Promotes and follows LJBTC, Inc's Signature Service standards and requirements ensuring a lasting impression of exemplary service resulting in supremely satisfied and loyal members and guests.

ESSENTIAL DUTIES AND RESPONSIBILITIES :

  • Presents menu, answers questions, and makes suggestions regarding food and service.
  • Records orders on check or memorizes it.
  • Relays order to kitchen and serves courses from kitchen and bars.
  • Garnishes and decorates dishes preparatory to serving.
  • Follows all policies for the responsible service of alcohol.
  • Requests identification from customers when legal age is questionable.
  • Observes diners to respond to any additional requests and to determine when meal has been completed.
  • Totals bill, processes and accepts payment in form of cash, credit card or membership signature.
  • Ladles soup, tosses salads, brews coffee, and performs other services as determined by particular restaurant practices.
  • Completes assigned "side work" (prerequisites for preparation / set up and closing)
  • Clears and / or resets tables at conclusion of each course.
  • Other duties may be assigned.

OUTCOME

The Server has a great impact on how restaurant guests and patrons perceive their dining experience. A genuinely friendly, attentive, knowledgeable server can help ensure that the guest is satisfied with his / her food selection and is eager to return.

SUMMARY

Supervises and coordinates activities of Cooks and other workers engaged in preparing and cooking food products. Follows AAA 4 Diamond service standards.

ESSENTIAL DUTIES AND RESPONSIBILITIES :

  • Assumes responsibility of kitchen in absence of Chef De Cuisine or Executive Chef (i.e. Staff performance, food quality, and sanitation, etc).
  • Trains, works, and oversees employees engaged in preparing, portioning, and garnishing foods to ensure that methods of cooking and garnishing and sizes of portions are as prescribed.
  • Instructs kitchen staff in various cooking methods and techniques as needed.
  • Maintains high level of food quality, freshness, and consistency at all times including presentation, taste, hot food hot and cold food cold. etc.
  • Requisitions Supplies and places food orders (ie. vegetables, meats, poultry, dairy, etc.) under the Chef de Cuisine's guideline.
  • Reviews daily pricing sheets and maintains knowledge of competitive pricing.
  • Ensures that all employees stations are setup with complete mise en place for all menu and related special items ten minutes prior to service.
  • Maintains a high level of communication with Executive Chef, Chef de Cuisine, Dining Room Manager, Kitchen Staff and wait staff.
  • Exceeds sanitation standards and assures cleanliness of overall kitchen by carrying out tasks and delegating duties as necessary.
  • Monitors kitchen employees to assure that correct closing procedures and or opening procedures are followed.

Supports the Restaurant Chef in the daily operations of the Club Kitchen, including menu design, training, cost control, banquet events, beach hut and restaurant operations.

ESSENTIAL DUTIES AND RESPONSIBILITIES :

  • Trains and oversees employees engaged in preparing, portioning, and garnishing foods to ensure that methods of cooking and garnishing and sizes of portions are as prescribed.
  • Responsible for kitchen operation in the absence of Restaurant Chef and / or Executive Chef (i.e. Staff performance, food quality, and sanitation, etc).
  • Instructs kitchen staff in various cooking methods and techniques as needed under Restaurant Chef and / or Executive Chef's guidelines.

  • Cleans patio railings, furniture and decks.

Supervises and coordinates activities of dining room personnel to provide fast and courteous service to patrons. ESSENTIAL DUTIES AND RESPONSIBILITIES :

  • Schedules dining reservations and arranges parties or special services for diners following set procedures.
  • Arranges parties or special services for meals following the setup procedures.
  • Greets guests in a friendly and courteous manner, escorts them to tables, and provides menus.
  • Promptly answers all incoming calls and accurately handles reservations and message taking.
  • Assigns work stations and coordinates activities of dining room personnel to ensure prompt and courteous service to patrons.
  • Inspects dining room serving stations for neatness and cleanliness, and requisitions table linens and other dining room supplies for tables and serving stations.

  • Assigns work to employees and monitors performance to ensure LJBTC, Inc.'s Signature Service standards are maintained.
  • Estimates food and beverage costs and requisitions or purchases supplies necessary to the "Front of the House" operations.
  • Confers with Sous chef, management and other service personnel to maximize menu options and related activities such as dining room, bar, and banquet operations.
  • Inspects food and food preparation to maintain LJBTC, Inc.'s Signature Service standards and sanitation regulations. Delegates responsibility with follow up to maintain the highest standards of cleanliness.
  • Investigates and resolves food quality and service complaints.

  • At busy times, should be able to cover any position of the Dining Room Staff.
  • Monitors staffing levels and ensures that the floor is properly covered at all times.
  • Fills in as needed by business demand on the dining floor and in the bar.
