Summary :
Apicii, the nationally acclaimed hospitality group, has partnered with the Seattle Mariners Major League Baseball Team to launch Seattle’s premiere Sports Bar & Grill and Microbrewery.
Located directly across from T-Mobile Park, the menu will feature elevated American classics and wood-fired pizzas served amongst multiple oversized screens for prime sports viewing.
Responsibilities :
Assist with the preparation and planning of meal designs.
Ensure that kitchen activities operate in a timely manner.
Monitor and record inventory, and if necessary, order new supplies.
Provide support to junior kitchen employees with various tasks including line cooking, food preparation, and dish plating.
Recruit and train new kitchen employees to meet restaurant and kitchen standards.
Create schedules for kitchen employees and evaluate their performance.
Adhere to and implement sanitation regulations and safety regulations.
Manage the kitchen team in the executive chef's absence.
Must Haves :
2+ years of culinary management experience in a high-volume upscale restaurant
Strong knowledge of food preparation, kitchen safety and sanitation, effective time management and quality control
Basic understanding of administrative tasks including inventory, purchasing, scheduling
Desire to learn from our culinary leaders and develop professionally and personally
Ability to communicate clearly with managers, kitchen and dining room employees, and guests.

VP of Operations - Apicii Hospitality
Apicii is a bespoke hospitality management company that develops, owns, operates, and
advises on restaurants, bars, and private event spaces across the United States.
We are currently looking for a dynamic Director of Operations who will oversee and grow all
food and beverage operations and strive to continually improve guest and employee satisfaction
while maximizing financial performance.
This is an exciting opportunity for an entrepreneurial manager who loves to travel and open
restaurants to contribute to high profile projects like The Boxyard in collaboration with ownership
of the Seattle Mariners; food and beverage at Grayson Hotel, the first Hyatt Unbound in New
York City; the nationally acclaimed Stock & Bond and Library of Distilled Spirits located in the
iconic First National Center in Oklahoma City; and the award winning The Wheel and Cisco
Brewers at The Village Stamford, a partnership with Wheelhouse Entertainment; amongst

Expectations :
Full ownership and management of the financials including the ability to control cost and
manage inventory, achieve team / performance / revenue targets, prepare budgets.
Develops means to improve profit, including estimating cost and benefit, exploring new
programming opportunities, etc.
Analyzes information and evaluates results to choose the best solution and solve
problems.
Ensures compliance with all food and beverage policies, standards and procedures by
training, supervising, follow-up and hands on management.
Interviews and hires management and hourly employees with the appropriate skills to

Requirements :
At least 5 years of experience in a director or senior management role overseeing multi-
unit, high-volume / high-profile restaurants, bars and hotels of various types of service
models (casual - mid level - fine dining)
Ability and willingness to travel as needed
Ability to collaborate with Marketing, finance, and HR
Must have experience in opening new properties, preferably in multiple US
markets / cities / states
Knowledge of economic and accounting principles and practices, P / L statements,
operating budgets, forecasting and scheduling, and the reporting of financial data
Knowledge of business and management principles involved in strategic planning,
resource allocation, human resources modeling, leadership technique, production
methods, and coordination of people and resources.
Superior knowledge of food and beverage including various cuisine types,
ingredients / products, cooking and cocktail crafting techniques, national & global trends
The ability to work well under pressure and be a leader who will NURTURE and
SUPPORT their TEAM.
Tech savvy / familiarity with Micros, Toast, Craftable, CTUIT, Avero, Open Table, Triple
Seat and Hot Schedules
Must be able to work nights, weekends, and some holidays

The Marketing professional will execute all aspects of marketing to drive food, beverage and private event sales at multiple restaurants, bars, membership clubs and event spaces across the United States.
To this effect, the position will partner with ownership, operating and sales teams, hotel and property management teams, as well as public relations and creative agencies, to execute plans, optimize programs, and report on results.
On occasion the Marketing professional will travel to Apicii sites to ensure proper execution of marketing plans; the frequency and duration of site visits will be determined on a case-by-case basis.
In addition, the Marketing professional will conduct periodic market research trips across the country, and provide ground support for restaurant openings in the region and across the country.

Line Cook
Summary :
The Line Cook is responsible for assisting the executive and sous chef with their daily tasks including preparing food to the chef’s exact specifications and setting up stations.
Responsibilities :
Sets up and stocks food items and other necessary supplies.
Prepares food items by cutting, chopping, mixing, and preparing sauces.
Cooks food items by grilling, frying, sautéing, and other cooking methods to specified recipes and standards.
Performs inventory checks and completes food storage logs.
Maintain cleanliness and complies with food sanitation requirements by properly handling food and ensuring correct storage.
Must Haves :
The ideal candidate must have an interest in cooking and willingness to learn. Must have at least 3 years of experience in the culinary industry.
